Can not stop eating these!

A friend of mine told me about these and so naturally I had to try them.

OREO TRUFFLES

OMG!

These are so amazing it is hard to stop eating them.

Don’t believe me? Try them for yourself and you’ll see what I mean.😀

INGREDIENTS:

  • 14.3 oz package of Oreos
  • 8 oz cream cheese
  • 12 oz dipping chocolate or candy coating (milk chocolate or vanilla)
  • Additional 2 oz dipping chocolate for drizzling or sprinkle

INSTRUCTIONS:

  1. Pulse oreos in a food processor until they are fine crumbs. (No food processor? No problem. Use your hands to crush cookies into tiny bits). Add crumbs to large mixing bowl.
  2. Slice up cream cheese and drop slices into the mixing bowl. Use the back of a large spoon to smash the cream cheese into the crumbs, stirring and mushing until it has become a thick paste.
  3. Pinch off walnut-sized clumps of the filling and roll into balls. Place on a plate that will fit in your freezer. Roll all of dough and place balls in the freezer for 30-45 minutes.
  4. Line a baking sheet with parchment paper.
  5. Place dipping chocolate in a small deep bowl. Microwave at 50% power for 1 minute, then stir. Continue microwaving at 50% power for 30 second intervals, stirring after each until chocolate is smooth.
  6. Remove oreo truffles from freezer and drop one-by-one into the dipping chocolate.
  7. Use a fork to scoop out the truffle, tapping the bottom of the fork on the edge of the bowl to remove excess chocolate. Tip the truffle onto the parchment paper. Allow chocolate to set.
  8. If desired, melt additional dipping chocolate using the same microwave method. Stir with a fork and drizzle over the truffles. Allow chocolate to set and store truffles in refrigerator.
  9. Enjoy!

Sausage Hashbrown Breakfast Casserole

Prep time: 10 MINS

Cook time: 35 MINS

Total time: 45 mins

INGREDIENTS:
  • 2 lb hot breakfast sausage (my family prefers mild)
  • 2 (8-oz) packages cream cheese, room temperature
  • 1 (30-32oz) bag frozen shredded hash browns
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 cups shredded cheddar cheese
  • 8 eggs
  • 2 cups milk
INSTRUCTIONS:
  1. Preheat oven to 350 degrees.
  2. In a large skillet, cook sausage until no longer pink. Drain fat.
  3. Stir together cooked sausage and cream cheese. Set aside.
  4. Add hash browns to skillet and cook until lightly brown. Place hash browns in bottom of lightly greased 9×13-inch pan. Top with sausage/cream cheese mixture and shredded cheddar cheese.
  5. Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over hash brown mixture.
  6. Bake, uncovered, for 35-40 minutes.
  7. Remove from oven and serve.
  8. ENJOY!

Hi Erin! I’m so glad to have you here today. So your book is called Wedding Day. Can you tell us a little about it?

Sure, here’s the blurb.

Famous Bull Rider Dallas Day met Cassie Bailey briefly in high school, but her plain looks and quiet personality left no lasting impression on him. Cassie, however, couldn’t say the same about Dallas.

Their paths cross again ten years later when Dallas is home recovering from an injury, and Cassie is the only veterinarian who volunteers her services at the home-town rodeo. She’s jump-starting her new practice, and every eligible man within a ten-mile radius is trying to land a date with the attractive vet.

Dallas’ older brother bets him that, even with all his charm and fame, Dallas can’t land a date with the reserved lady vet. Not one to turn down a challenge, Dallas makes it his mission to win a date with Cassie. After seeing her, he realizes they’ve met before, but he doesn’t remember her being so pretty. His persistence pays off, but when Cassie finds out about the bet, their new love is put to the test.

That sounds pretty intriquing. And like a fun read. How about a small taste?

“Is there anything I can help you with?” A deep voice asked from behind her.
“No, I think we have it.” She hopped down from the pen. Glacier blue eyes locked with hers. She would know his eyes anywhere. Her heart quickened just as it did the first time she’d ever laid her gaze upon him, and a tingling sensation shot through her.
Dallas looked older than she remembered, broader, gruffer, but still sexy.
Tucker, you have Tucker.
Where was he, anyway? In her haste to get ready, she’d forgotten to call him.
“Dallas? Yeah, we can use a hand.” Chevy still fumbled with the lock. “Can you come over here and help me with Knuckle Head? Dr. Bailey wants him to walk around so she can get a closer look.”
“I really don’t think that’s necessary–”
“I would love to help. That’s why I’m here.” Dallas jogged to the front of the bull and grabbed the lead rope with his left hand. A plastered cast circled his right wrist and rose halfway up his forearm.
She turned to Spencer and furrowed her brow.
Spencer stared back at her and displayed her pageant winning 2005 Miss Frisbee smile, her thumb up in the air. Some friend she was.
Dallas and Chevy led the bull out of the pen while she observed the bull’s gait.
“Let’s get him over by a water hose. I want to get a closer look at his foot.” She pointed toward a washing station and followed behind the men as they led the bull, sure to steer clear of Knuckle Head’s hind legs in the event he wanted to kick her.
From her position, she had a clear view of Dallas’s backside. Everything appeared to be as tight as she remembered, which did nothing to settle those distracting tingling sensations.
Focus.

Oh my…I think I’m falling in love with this book already. Do you have a particular book you remember? Like the first one you ever read?

Well, this is a tricky one because I can give you all the ones I had to read in school, but to me, those don’t count. I had no desire to read those books, so the first book I picked up because I wanted to read was something by Nicholas Sparks. I think The Rescue. From then on, I was hooked. 

I love Nicholas Sparks. Curling up with one of his books and a cup of hot cocoa or coffee…perfect. Hey, do you drink coffee? How do you take it?

At home, I put honey and almond milk in it. From Starbucks, I get an Iced Americano (depending on the day depends on the size, usually Grande, sometimes Venti) with two percent milk and two pumps of classic. 

Yum. Other than coffee, do you ever have a drink to relax or unwind? Pick your poison. What is your favorite alcoholic drink? 

43 with coke! 

I can’t say I’ve ever tried that one but it sounds good. Hey, I almost forgot, it’s Saturday. What are you. going to be doing tonight?

After putting my kids to bed, I usually go to bed, too. Boring, I know! But, despite the day, I’m pretty tired chasing everyone around so I sleep!

I hear you there. I’m actually at work right now. Just for fun, what is one job you would never want to do?

Trash Pickup. Yuck!

I don’t blame you there. But I have had some dirtier jobs than that believe it or not…:roll:

Can you give us a little background on yourself?

I was born and raised in Southwest Arkansas. I spent my teenage years working for my aunt at the local gas station flipping burgers and making milkshakes, dreaming of the day when something better would come my way, and it did in the form of a five foot six, one hundred and fifty pound engineer.

Fast forward ten years later, I found myself stuck inside an apartment in South Korea while my daughter went to preschool and my husband went to work. Alone and unable to speak the local language I turned to books for a friend. After reading a few hundred in such a short time, I decided to try my hand at writing one.

That’s always fun and scary rolled into one. ☺

Yeah. Well that first one sucked, but by the fifth and sixth book, I started to get the hang of this writing thing. Getting the first contract in the mail was a dream come true. Now, with three babies at home, I squeeze in stories one word at a time, one sentence at a time, one day at a time.

It’s hard to do when you have a family but you definitely prove it can be done. What about now? What’s your home life like?

I’ma full time mom, a full time wife, with a little writer sprinkled in whenever I can get the chance. And the laundry? Well, it’s best not to open the washroom door!

Orange Dreamsicle Cake

ORANGE DREAMSICLE CAKE

My husband LOVES orange cake. It’s his favorite so when I came across this recipe, I had to try it. It is abaolutely  delicious!

CAKE INGREDIENTS:

1 box of orange cake mix

1 box of orange jell-o

1 cup of boiling water

FROSTING INGRIEDIENTS:

1 box if vanilla pudding

1 cup of cold milk

1 tub of cool whip

CAKE DIRECTIONS:

1. Prepare mix as instructed.

2. While still warn , poke holes in cake with the end of a wooden spoon.

3. Mix jell-o as directed and pour over cake.

4. Put in fridge to cool.

FROSTING DIRECTIONS:

1. Mix vanilla pudding with cold milk.

2. Fold in cool whip.

Spread frosting on cake and enjoy!!
